Green Chili Chicken Enchilada

Instructions

  1. Saute the onion until softened. Add the chicken, spices, beans, corn, chilies, cilantro, and enchilada sauce, then stir in the tortillas.
  2. Top with the cheese, then bake at 425 until bubbly and the cheese is melted.
  3. Plate, garnish, and serve hot.
