Green Chili Chicken Enchilada

Ingredients
- 1/2 C sweet onion, medium chop
- 1 t cumin
- 1/4 t garlic powder
- 2 C chicken, cooked, shredded or chopped
- 16 oz can black beans, drained and rinsed
- 2 C fresh corn
- 1 C fire roasted green chilis, diced
- 2 T cilantro, choppped
- 15 oz can green enchilada sauce
- 5 ea corn tortillas, torn bite-size pieces
- 1 C Jack cheese, grated
Suggested Garnishes
- avocado
- cilantro
- sour cream
- yogurt
Instructions
- Saute the onion until softened. Add the chicken, spices, beans, corn, chilies, cilantro, and enchilada sauce, then stir in the tortillas.
- Top with the cheese, then bake at 425 until bubbly and the cheese is melted.
- Plate, garnish, and serve hot.
